  • GREASE large muffin tins or line with paper baking cups.
  • MIX flour, cornmeal, sugar, baking powder and salt in a large bowl. Cut in butter until mixture is crumbly.
  • WHISK together egg yolk and molasses; stir in milk.
  • BEAT egg white until soft peaks form.
  • STIR liquid mixture into dry ingredients, stirring just until moistened. Fold in beaten egg white. Spoon into muffin cups, filling 2/3 full.
  • BAKE at 375°F (190°C) for 15 to 20 minutes or until firm to touch. Cool in pan 5 minutes; remove muffins and cool on racks. Store in airtight container.
