  • Cook and stir zucchini and cauliflower in hot oil in large nonstick skillet on medium heat until vegetables are crisp-tender.
  • Add pasta, tomatoes and basil; mix lightly. Cook until heated through, stirring occasionally.
  • Stir in Velveeta; cook until Velveeta is completely melted and mixture is well blended, stirring occasionally.

Use Your Microwave

Mix zucchini, cauliflower and oil in 3-L microwaveable casserole dish; cover. Microwave on HIGH 4 to 6 min. or until vegetables are crisp-tender, stirring every 2 min. Add remaining ingredients; mix lightly. Microwave on MEDIUM 4 to 6 min. or until Velveeta is completely melted, stirring every 2 min.
