  • Mix first 5 ingredients in medium bowl until blended. Fold in crabmeat just until combined. Refrigerate 15 min.
  • Meanwhile, trim ends of cucumber. Cut cucumber into 30 slices, each about 1/4 inch thick.
  • Top cucumber slices with crabmeat mixture and tomatoes.

Substitute

Chop 120 g imitation crabmeat; use instead of the flaked, drained canned crabmeat.

Make Ahead

Prepare crabmeat mixture, slice cucumber and quarter tomatoes; refrigerate (in separate airtight containers) up to 2 hours. Top cucumber slices with crabmeat mixture and tomatoes just before serving.

Special Extra

For added flavour and crunch, garnish with toasted sliced almonds before serving.
