  • COOK potatoes until almost tender. Add broccoli and cook until broccoli and potatoes are tender;drain.
  • HEAT oil in large frying pan. Add vegetables and remaining ingredients except cheese. Cook until potatoes are lightly browned.
  • STIR in 1 1/3 cups of the cheese and heat until melted. Sprinkle with remaining cheese. Cover and let stand until cheese is melted.

    My dad is a very picky eater only likes his meat and potatos, he rated this 10/10. And im not a veggie person but I ate them all. Who knew I would like them. Very good and lots of taste

    Potatoes and broccoli ended up a little mushy. I liked the flavour of the peppers, onion, and garlic though.

    I am always looking for different things to do with potatoes, rather than the original mashed. This recipe was perfect! The kids even really enjoyed it. I will make this often, having fun experimenting with different vegetables!
