  • Cut orange in quarters leaving rind on. Place orange, and cranberries in blender or food processor and chop finely (do not puree).
  • Place prepared fruit and peppers into large bowl. Add sugar to fruit and mix well. Let stand 10 min.
  • Combine water and fruit pectin crystals in a small sacepan. Bring to a boil and boil 1 min, stirring constantly.
  • Stir pectin into fruit mixture and continue to stir for 3 minutes until most of the sugar is dissolved.
  • Pour into clean jars or plastic containers. Cover with tight lids and let stand at room temperature until set (may take 24 hours).
  • Store in freezer. If used within 3 weeks jam may be stored in refrigerator.

Serving Suggestions

Serve as a complement to roast turkey, prok or ham. Add pizzazz to chicken fingers for a quick apetizer.

    This relish is very full flavoured. The jalapenos adds some kick. The cranberries give it a wonderful colour. I actually prefer it to jalapeno jelly on crackers and cream cheese.
