  • Heat oil in large saucepan on medium heat. Add onions and ginger; cook 5 min., stirring frequently and adding curry paste for the last minute.
  • Add pumpkin, broth and water; mix well. Bring to boil; cover. Simmer on medium-low heat 20 min., stirring occasionally.
  • Blend pumpkin mixture, in batches, in blender until smooth, returning each blended batch to saucepan. Add cream cheese product and milk to saucepan; cook and stir on medium heat 2 to 3 min. or until cream cheese is completely melted and soup is heated through.

Special Extra

Season with ground white pepper to taste. Garnish with chopped fresh mint, cilantro or basil just before serving.
