  • Whisk coffee, sugar, 1 cup coconut milk and 1/2 cup 2% milk in pie plate until coffee is dissolved.
  • Beat pudding mix, remaining coconut milk and remaining 2% milk in large bowl 2 min. Stir in Cool Whip.
  • Dip half the ladyfingers, 1 at a time, in coffee mixture, turning to coat both sides of each; place in single layer on bottom of 9-inch square pan. Cover with half the pudding mixture. Repeat all layers. Refrigerate 4 hours.
  • Sprinkle with coconut just before serving.

When pouring coconut milk from the can, it might be lumpy. Pour into a bowl and whisk until smooth before using as directed.


This luscious dessert can be prepared up to 24 hours before serving.

Toasting coconut is easy. Just spread coconut evenly onto bottom of shallow pan. Bake in 350°F oven 7 to 10 min. or until lightly browned, stirring frequently. Or, spread onto bottom of microwaveable pie plate. Microwave on HIGH 3 min. or until lightly browned, stirring every minute. Watch carefully as coconut can easily burn!
