  • Wash lentils; place in medium bowl. Add enough water to completely cover lentils. Let stand 10 min.; drain.
  • Heat oil in large saucepan on medium-high heat. Add vegetables, ginger and cumin seed; cook and stir 5 min. or until vegetables are beginning to soften.
  • Stir in broth, tomatoes, cream cheese product, dry seasonings and lentils. Bring to boil, stirring frequently until cream cheese is completely melted; cover. Simmer on medium-low heat 45 min. or until lentils are tender, stirring occasionally.
  • Blend soup, in batches, in blender until smooth. Serve topped with fresh coriander.


For a fully meatless soup, prepare using vegetable broth.


If you have an immersion blender, you can use that to blend the soup right in the saucepan.

Special Extra

Serve topped with naan croutons. Just cut 1 naan into 1/2-inch pieces; spread onto baking sheet. Bake in 400ºF oven 10 min. or until crisp. Sprinkle over individual servings of soup.
