  • SAUTE onion in butter until lightly browned. Add rice, cooking and stirring for 2 minutes over medium heat. Stir in mushrooms, broth and water. Continue to cook and stir until most of the liquid is absorbed.
  • JUST before serving, stir in cheese and parsley. Serve immediately.

    I also added some chopped green and red pepper to this recipe. It was very tasty!
