As a special garnish, stir 2 tsp. curry powder into 1/2 cup low fat sour cream. Drizzle 1 Tbsp. of the sour cream mixture over each serving of hot soup just before serving.

This went together easily, especially as I have an immersion blender to puree it. To lower the fat, omit the mayo, and add one cup cooked rice and two cups skim milk before you blend. Creamy without the fat.
I loved this soup. The mayo really added a good taste.
