  • Heat oven to 400┬░F.
  • Toss potatoes with garlic and oil; spread onto bottom of foil-covered rimmed baking sheet sprayed with cooking spray.
  • Bake 30 min. or until potatoes are tender.
  • Place potatoes in medium bowl. Mix sour cream, parsley and 1/4 cup cheese until blended. Add to potatoes; mix lightly. Sprinkle with remaining cheese.

Look for firm, smooth, well-shaped potatoes that are free of wrinkles, cracks and blemishes. Avoid any with green-tinged skins or sprouting "eyes" or buds.
