Discard any clams with chipped or cracked shells. Gently tap any clams with open shells; discard clams that do not close their shells. Scrub remaining clams; place in large bowl. Add enough water to completely cover clams. Let stand 30 min. to remove sand from inside shells. Remove clams from water, leaving any grit behind. Cook as directed.
Serve with your favourite hot steamed fresh vegetable, such as broccoli or green beans, to round out the meal.
Substitute vegetable broth for the wine.
