  • Cook pasta as directed on package, omitting salt. Drain pasta, reserving 1/3 cup cooking water.
  • Cook tomatoes, cream cheese product and lemon juice in large deep skillet on medium heat 3 to 5 min. or until cream cheese is completely melted and mixture is well blended, stirring frequently.
  • Add pasta to skillet. Stir in spinach, half the Parmesan and just enough of the reserved cooking water until sauce is desired consistency. Cook 2 min. or just until spinach is wilted and sauce is heated through, stirring frequently. Sprinkle with remaining Parmesan.

Special Extra

Cook 1/4 tsp. crushed red pepper along with the tomatoes, cream cheese product and lemon juice.

Substitute

Substitute baby arugula for the spinach.
