Place chicken between sheets of plastic wrap on cutting board. Use meat mallet to pound chicken to desired thickness.
Serve with a mixed green salad and slice of whole wheat bread to round out the meal!

This chicken recipe is pretty good. Rather than rolling the chicken I used a sharp knife to cut a pocket and then put the stuffing in there. I also added more hot sauce since my husband and I prefer a bit more heat.
Soon good! I didn't have the green onions, apricot preserves, or hot pepper sauce and I put some marble cheese on top of the chicken and the bacon on top of the cheese to hold it on top - delicious!
Too much fuss for the end product. It tasted OK but my family agreed that we won't make it again.
