  • Heat oil in large saucepan on medium heat. Add onions and garlic; cook 5 min. or until tender, stirring frequently. Add tomatoes, broth, water and cilantro; stir. Bring to boil; simmer on medium-low heat 20 min., stirring occasionally.
  • Use immersion blender to blend soup until smooth. Add 1/3 cup cream cheese product; cook on medium heat 3 to 5 min. or until cream cheese is completely melted, and soup is well blended and heated through, stirring constantly.
  • Drop spoonfuls of remaining cream cheese over individual bowls of hot soup just before serving.

Special Extra

Garnish with additional cilantro just before serving.


If you don't have an immersion (hand-held) blender, you can use a regular blender instead, adding the vegetable mixture to blender in small batches to blend until smooth.
