I thought...and so did my co-workers...that this was absolutely delicious. I added chicken and removed the cauliflower and used full-fat mozza. I also used Alfredo sauce instead of tomato. The cream cheese I used 1/4c plain and 1/4c herb & garlic...soooo delicous!!!
3.5 although I give it a 4 as other family members weren't as impressed. Fried some extra lean ground turkey with minced onion and garlic and cooked tiny carrots along with fresh cauliflower and brocolli prior to adding to the casserole. Added the whole tub of cream cheese with a bit more pasta sauce and pasta and veggies. I certainly enjoyed it and will be looking forward to it for lunch tomorrow.
