This creamy vegetable side dish is a perfect accompaniment to fish or chicken. Tomatoes and green and yellow zucchini are part of a tasty, cheesy filling that gets topped with golden Panko-Parmesan crumbs.

  • Heat oven to 375ºF.
  • Combine zucchini. Mix cream cheese product and milk until blended.
  • Spread half the zucchini onto bottom of 8-inch square baking dish sprayed with cooking spray; cover with layers of 1/3 each of the cream cheese mixture and mozzarella. Repeat all layers. Top with tomatoes, remaining cream cheese mixture and remaining mozzarella.
  • Combine bread crumbs and Parmesan; sprinkle over casserole.
  • Bake 20 to 25 min. or until vegetable mixture is heated through and top is golden brown.

Serving Suggestion

Serve with hot baked fish or chicken.
