  • Heat oven to 350ºF.
  • Use rolling pin to flatten bread slices to 1/16-inch thickness. Trim and discard crusts. Brush bread with oil. Cut each bread slice into 4 squares. Press 1 square, oiled side up, into each of 24 mini muffin pan cups sprayed with cooking spray.
  • Bake 10 min. or until golden brown. Sprinkle cheese into toast cups; bake 5 min. or until melted. Cool 5 min. Meanwhile, spoon Miracle Whip into small resealable plastic bag.
  • Place 1 spinach leaf in each toast cup. Cut small piece off one bottom corner of Miracle Whip-filled bag; use to top each spinach leaf with small dab of Miracle Whip. Top with remaining ingredients.


Substitute any small leafy salad green, such as arugula or leaf lettuce, for the spinach.
