The recipe needs double the cooking time!! I made this for Christmas dinner and used an 8 lb roast as the recipe advised. It was no where near done at the 2 hour mark....and my oven was set to 375 degrees. It took an extra 2 hours to be finished and not pink inside. Huge disappointment when presented and carved at the dinner table and it wasn't done! However, once cooked it was perfect.
