Stew can be made ahead of time, omitting the cilantro and dressing. Cool, then refrigerate up to 2 days. When ready to serve, cook on medium-low heat until heated through, stirring occasionally. Stir in cilantro and dressing.
The cauliflower in this flavourful stew provides an excellent source of vitamin C.

We quite enjoyed this stew. I used pork instead of chicken as that is what we had and it worked well. I also added some thin slices of carrot to add more colour as well as a bit more vegetable as well as I used more cauliflower to get the head used up. We did not include the cilantro or the Miracle Whip and it tasted just fine. I also added one container of chicken stock to make this a soup instead of a stew. We will definitely use this recipe again - especially when there is a cauliflower that needs to get used up!
