Make It

  • Place potatoes in large saucepan. Add enough water to completely cover potatoes. Bring to boil. Reduce heat to medium-low; simmer 10 to 15 min. or until potatoes are tender. Drain.
  • Beat potatoes with electric mixer 1 min. Add cream cheese product, curry and salt; beat until smooth.

Do not beat the potatoes in a nonstick pan as this could damage the nonstick surface. Transfer potatoes to a large bowl, then beat potatoes as directed.

Make Ahead

Sweet potatoes will discolour if peeled and exposed to the air for too long. If potatoes are peeled ahead of time, cover and store in refrigerator until ready to use.

My family did not care for this at all. We like sweet potato, and we like curry, but perhaps not together.

Very good! I used half of the tub of cream cheese and a tad more curry and it still tasted great.

I love curry and I love sweet potato but this didnt do anything for me. It could have been the texture of the potato because I love baked sweet potato and when I mashed it, it just didnt taste good.
