  • Add boiling water to gelatine; stir 2 min. until completely dissolved. Beat cream cheese in large bowl with mixer until creamy. Gradually add gelatine, beating constantly on low speed until well blended. Add sugar and vanilla; beat 2 min. Gently stir in 1-1/4 cups Cool Whip. Spoon 1/3 of the cream cheese mixture into plastic wrap-lined 2-L bowl. Arrange jelly rolls in single layer over cream cheese mixture; cover with remaining cream cheese mixture.
  • Refrigerate 1 hour or until set.
  • Unmold dessert onto plate; remove and discard plastic wrap. Insert doll pick into top of dessert. Tint remaining Cool Whip with food colouring; spread over doll's body and gelatine mold. Decorate with sprinkles and candies.

I love this dolly cake! I have made it three times now, (in different colours of course)for both of my young grandaughters. Seeing their faces light up just makes my day! And the best part for them is they get a new barbie out of it!

I was also disappointed that this wasn't a traditional cake. I decided to use a 2-layer cake mix and baked it in my largest nesting bowl which I both greased and flowered. I decorated it the same as this one but used an icing bag with a number 21 tip and used silver dragees along the "hem" of the skirt and bodice of the dress. My daughter loved it as did her friends.

I was a little disppointed that the Dolly cake was not an actual cake, but the idea is still great. I recommend that if you cannot find a doll pick to instead buy an actual doll from the 99c store and then you can give your daughter the doll afterwords.
