  • GREASE 12 large muffin tins or line with paper baking cups.
  • GRATE rind from orange; set aside. Squeeze juice from orange and pour into measuring cup. Add buttermilk to measure 1 cup liquid. Set aside.
  • SIFT together flour, cocoa, baking powder and salt in large bowl.
  • WHISK together eggs, sugar and oil until creamy; stir in orange rind and buttermilk mixture.
  • STIR liquid mixture into dry ingredients with chips, stirring just until moistened. Spoon into muffin cups, filling 2/3 full.
  • BAKE at 375°F (190°C) for about 20 minutes or until firm to the touch. Cool in pan 5 minutes; remove muffins and cool on rack. Store in airtight container.

    This recipe was great!I used choclate squares instead of cocoa powder.However i would reccomend increasing the amount of sugar or reducing the amount of buttermilk because the buttermilk leaves a slightly sour taste in the batter.
