I've been doing tomatoes this way for years. Before drizzling with balsamic vinegar, lightly season your tomato with salt & pepper. Next, I stuff my tomatoes with Bococini Pearls followed with a topping of parmesan. Whether on the BBQ or baked in the oven - they always are a hit!
It tastes great and is so simple to make. It's a great side dish or appetizer!

It's winter here, and we had snow yesterday, so I couldn't BBQ these. I grilled them in the oven, and they still turned out very well!
I'm watching my weight so this was perfect and low cal. I had this with 2 slices diet bread and I was good for 3 hrs. without feeling hungry. It's also good for taking to school or work wrapped in foil and eaten cold.

A GREAT DISH TO SERVE WITH FISH
I do tomatoes exactly like this only I use the whole tomato, just cut the top off and core a bit out in order to add sundried tomato dressing and Kraft Parmesan cheese. Bake 350 oven for about 15 minutes with other oven items. Excellent flavour and excellent taste Ruby

Very easy and lots of variations to try. Grill eggplant, zuchinni, mushrooms and peppers brushed with your favourite salad dressing.

I make these in oven also and I place some mozzerella cheese on them and then the parmesan cheese on top. Yummie!
