Wow your guests with this tasty, super simple dish that's packed with nutrition! The spinach is an excellent source of vitamin A, while the red pepper is a good source of vitamin C, and the cheese provides calcium.

I have made this many times for a Sunday morning breakfast or for a holiday breakfast. Usually set it up the night before and then pop it in the oven the next morning. Just wish I could make it smaller to take camping so I could do it on the RV-Que ;-)
Made this for a luncheon...it was a big hit. Will make it again and again.
Needed to cook a little longer but very good....even without the green pepper. Pre testing for Christmas brunch...It will be on the menu!
