  • Preheat oven to 375°F. Whisk cream cheese and milk until smooth. Stir in eggs, corn, creamed corn and cheese.
  • Mix cornmeal, flour, sugar and baking powder in small bowl. Add to liquid mixture; stir until well blended. Pour into 13x9-inch baking dish sprayed with cooking spray.
  • Bake 30 to 35 min. or until golden brown.

Special Extra

For an adult touch, prepare as directed, adding 1/4 cup each finely chopped red pepper and green onions to the batter before spooning into baking dish.

Cooking Know-How

To soften cream cheese quickly, place in microwaveable bowl. Microwave on HIGH 15 to 30 sec.

    Tried this for family - it was not well received. Looked great, smelled great coming out of the oven, but the corn niblets just weren't a hit - I think it may have been better had the actual niblets been left out and only used the creamed corn.
