You will need about half a small head of cauliflower to get the 4 cups florets needed to prepare this recipe. To cook the cauliflower, pull off any outer green leaves from the head. Break cauliflower into equal-size florets, then use as directed.
Substitute broccoli florets for the cauliflower.
