  • Heat oil in nonstick skillet on medium-high heat. Add zucchini; cook 1 min. Add shrimp; cook until shrimp turn pink, stirring occasionally.
  • Stir in tomatoes with their liquid and the dressing. Cook on low heat until heated through. Sprinkle with cheese.
  • Spoon over cooked rice. Sprinkle with chopped fresh parsley, if desired.

    I have made this recipe several times....it turns out wonderful every time!! My Hubby & oldest shild love it, as do I. The only problem I have with the recipe is that my two youngest won't eat it...but we love it so mcuh...it's one time I don't mind making them something else!!

    Excellent! I've used regular feta because I can't find the one its called for, the taste would probably be even better with the sundried tomato feta.I'm going to make this recipe very often. THANK YOU!
