  • Heat barbecue to medium heat.
  • Thread chicken onto 8 skewers alternately with peppers, zucchini and peaches; place in shallow dish.
  • Pour dressing over kabobs; turn to evenly coat kabob ingredients with dressing. Refrigerate 10 min.
  • Drain kabobs; discard dressing. Grill kabobs 5 min. on each side or until chicken is done. Serve over salad greens.

Cooking Know-How

If using wooden skewers, soak them in warm water for 30 min. before using to prevent them from burning on the barbecue.

Substitute

Substitute 3 cups hot cooked rice for the salad greens.
