  • Cook edamame in boiling water in saucepan 3 to 5 min. or until crisp-tender; drain. Rinse with cold water; drain again and pat dry.
  • Reserve 1 Tbsp. edamame; process remaining edamame in food processor until coarsely chopped. Transfer to medium bowl. Add avocados, red peppers, onions and dressing; mix just until combined.
  • Top with reserved edamame. Serve with chips.

Special Extra

For a touch of heat, substitute 2 Tbsp. of the red pepper with minced jalape├▒o peppers.
