  • Heat 1 Tbsp. oil in large skillet on medium heat. Add onions, garlic and basil; cook and stir 5 min. or until onions are crisp-tender. Add eggplant; cook 10 min., stirring frequently.
  • Stir in pasta sauce; bring to boil. Simmer on medium-low heat 10 min., stirring occasionally. Meanwhile, heat oven to 350°F.
  • Remove skillet from heat. Stir into tomatoes. Spoon into 2-L casserole dish sprayed with cooking spray.
  • Combine bread crumbs, mozzarella, Parmesan and remaining oil; sprinkle over vegetable mixture.
  • Bake 30 to 35 min. or until vegetable mixture is heated through and bread crumb topping is golden brown.

Serving Suggestion
