This really is a fantastically easy dish! I added 1 clove garlic & ground pepper to taste, chopped red & green pepper & red onion. I also used fresh parmasean cheese on top the last couple minutes of baking. It was a family pleaser for sure!

Easy, easy, easy! Looks and tastes great to boot! Served this as part of Christmas brunch. Increased the ingredients by 1/3 (for more servings) and adjusted the cooking time slightly (only by about 10 min.) until centre of dish (9x13)was firm. Followed a raters hint and also grated some cheddar cheese on top. I liked this dish because the prep was quick and easy and I got to enjoy family time around the tree while it was baking.

This is spectacular! I make this on a regular basis. My favourite toppings are, onion, sliced tomato, slivered red/orange or yellow pepper, black olives topped with parmesan cheese just as it comes out of the oven. It's great to take to work for lunch - it's good hot or cold!
