Paella is usually made in a shallow metal pan on an open flame and has to be tended to as it cooks. We thought we would try an unconventional way of making it using an electric pressure cooker. And guess what? We did it! We simplified the classic recipe, making it simple enough to prepare even on a busy weeknight.

  • Heat dressing in electric pressure cooker using SAUTÉ setting. Add chorizo and onions; cook 4 min., stirring frequently. Add garlic and dry seasonings; cook and stir 1 min. Add rice, broth and tomatoes; mix well.
  • Close and lock lid. Turn Pressure Release Valve to Sealing position. Cook 6 min. using HIGH PRESSURE COOK setting. When timer goes off, use Quick Pressure Release to release pressure before opening lid. Slowly remove lid.
  • Add shrimp and peas; mix lightly. Cook on SAUTÉ setting 4 to 6 min. or until shrimp turn pink, stirring frequently. Sprinkle with parsley.
  • Serve with lemon wedges.


Substitute Italian sausage links for the chorizo.

Special Extra

For a touch of heat. add crushed red pepper to cooked chorizo and onions in electric pressure cooker along with the garlic and dry seasonings.
