  • Heat oven to 375ºF.
  • Combine mushrooms, carrots and potatoes in 3-L casserole dish sprayed with cooking spray.
  • Place flour in pie plate. Add chicken, 1 breast at a time, turning to evenly coat both sides of each breast.
  • Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook 3 min. on each side or until evenly browned on both sides. Remove chicken from skillet, reserving drippings in skillet. Place chicken over vegetables in casserole dish.
  • Add onions, garlic and thyme to reserved drippings; cook 1 min., stirring constantly to scrape browned bits from bottom of skillet. Cook 4 min., stirring frequently. Add remaining ingredients; mix well. Pour over ingredients in casserole dish; cover.
  • Bake 1 hour or until vegetables are tender and broth is slightly thickened, uncovering for the last 20 min.

Serving Suggestion

Serve with crusty whole wheat buns to soak up the rich sauce.
