  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, cook bacon in large deep skillet on medium-high heat 5 to 7 min. or until evenly browned, stirring frequently. Use slotted spoon to remove 1/2 cup bacon from skillet; drain on paper towels. Reserve for later use.
  • Remove and discard half the bacon drippings from skillet. Add red peppers and shallots to remaining bacon and drippings in skillet; cook 2 to 3 min. or until shallots are translucent, stirring frequently. Stir in pasta sauce and cream; simmer on medium-low heat 2 to 3 min. or until slightly thickened, stirring constantly. Add black pepper and 1/4 cup cheese; mix well.
  • Drain pasta. Add to pasta sauce mixture in skillet; mix lightly. Simmer 2 min. or until heated through, stirring frequently.
  • Serve topped with remaining cheese and reserved bacon.

Garnish with your favourite fresh herb, such as basil, sage or thyme, before serving.
