This is similar to my old recipe but am going to try this one but substitute eggplant. We love zucchini and eggplant and they are similar. Some shredded Paremsan or Asiago would be really tasty sprinkled on top.
definitely loved this recipe since i found it a few years ago. made it a few time but i need to make it again lol.
Made this recipe and added onions and mushrooms. Went wonderfully with steak.
