  • Mix first 3 ingredients.
  • Combine all remaining ingredients except cilantro and nuts in large bowl. Add dressing mixture; mix lightly. Refrigerate 1 hour.
  • Top with cilantro and nuts just before serving.

Special Extra

For added flavour, stir 1/2 tsp. sesame oil into dressing mixture before tossing with noodle mixture.

Prepare using 3/4 cup purchased pre-shredded carrots. Look for them in the produce section of most supermarkets.
