  • Place cakes, top-sides up, in 2 clean 9-inch round pans. Pierce cakes with large fork at 1/2-inch intervals.
  • Add 1 cup boiling water to each flavour jelly powder in separate bowl; stir 2 min. until completely dissolved. Carefully pour red jelly over 1 cake layer, and green jelly over remaining cake layer. Refrigerate 3 hours.
  • Unmold cakes. Fill and frost with Cool Whip. Keep refrigerated.

Special Extra

For coloured frosting, gently stir 2 to 3 drops food colouring into the Cool Whip before using as directed.

    This cake has become the traditional birthday cake in our family. My kids love to pick the Jello flavours for their cake. Party goers always come back for seconds!

    I make this cake every Easter and it's one recipe my family requests each year. I use lemon and lime jello powders. There isn't a crumb left once it's taken out of the fridge.

    Easy and quick to do. Its one that I use a fair amount. Another variation on this I use for halloween parties - 1 box chocolate cake mix baked in 13 x 9 pan. Poke holes in cake and pour prepared instant Jello Chocolate Pudding mix over cake (do not use jelly). Top with "gummy worms" or other insect-like candies. Top this with 1 300g box of crushed chocolate cookies wafers. Kids love this and think they're eating dirt.
