  • Whisk eggs and milk in large bowl until blended. Add remaining ingredients; mix well.
  • Pour into 2 (9-inch) pie plates sprayed with cooking spray.
  • Refrigerate at least 8 hours or overnight.
  • Heat oven to 350ºF. Bake casseroles, uncovered, 55 min. or until knife inserted in centres comes out clean.

Grab and Go

Prepare and bake recipe as directed. Cool, then refrigerate up to 24 hours. When ready to serve, microwave each serving on microwaveable plate on HIGH 40 to 45 sec. or just until warmed. Wrap in paper napkin before walking out the door.

Special Extra

Serve topped with sour cream and salsa.

Variation

Prepare as directed, substituting a 13x9-inch baking dish for the 2 pie plates and increasing the baking time to 1 hour or until casserole is puffed and golden brown.
