  • Heat oven to 400°F.
  • Combine tomatoes, stuffing mix and garlic just until stuffing mix is moistened.
  • Place 1 chicken breast on centre of each of 4 large sheets of heavy-duty foil sprayed with cooking spray; top with basil, stuffing mixture and cheese. Bring up foil sides; double fold top and ends to seal each packet, leaving room for heat circulation inside. Place in 15x10x3/4-inch pan.
  • Bake 30 to 35 min. or until chicken is done (170ºF). Cool 5 min. Cut slits in foil to release steam before opening packets.

Serving Suggestion

Serve with steamed Italian-style vegetables.


No heavy-duty foil on hand? Just use double-layer sheets of regular foil instead.

    Too much tomatoes for my taste.

    I found this slightly too saltyfor my tastes, but I attribute that to the stuffing. I would try making it with reduced-salt stuffing (if possible). I have made it in a pan covered with foil rather than in four individual foil packages so I cannot say if the method makes a difference.
