I made this as a casserole and enclosed the dish in tin foil; sliced the chicken in half and used *********** spanish rice. After an hour chicken barely cooked, so microwaved it for 2 mins. Also topped it with extra salsa when servicing. Super easy and delicous. Will make this again!
