  • Heat oven to 400°F.
  • Mix soup and 2 Tbsp. hot water; set aside. Combine stuffing mix and remaining hot water; spoon onto centres of 4 large sheets heavy-duty foil.
  • Top with chicken, ham, vegetables and soup. Fold foil to make 4 packets; place on baking sheet.
  • Bake 30 to 35 min. or until chicken is done (170°F). Cut slits in foil to release steam before opening packets.

Cooking Know-How

To prevent the stuffing from sticking to the foil, spray foil with cooking spray before using. Or, use nonstick foil.

If the chicken breasts in your market are larger than 1/4 lb. (115 g) each, they will take longer to cook. Be sure to cook them long enough so that they are no longer pink in the centres and the juices run clear (170°F).

    This recipe is fantastic!!! Super fast to prep. My husband, daughter and I all loved it. The changes I made were; I omitted the ham, changed the frozen peas to a frozen pea/carrot/corn/green bean mix, and added some shredded cheddar cheese to the top before closing the foil up. I also sprayed the foil with some cooking spray after reading some people had some issues with stuffing sticking. Had no problems with that at all with the spray. This recipe is fast to get ready, tastes amazing, has less dishes to wash than usual recipes and is a great idea when you want to do something new with boneless, skinless chicken : )

    Boring and bland. There are better things to do with (expensive) chicken breasts.

    Yummy. Left our the ham as we are not big fans and seasoned up with pepper and a bit of salt. Will make again.
