Time-Saver Muffin Tin Scalloped Potatoes

It’s the most wonderful time of the year! Yes, the holidays are a wonderful time of year…or should I say can be a wonderful time of year. Let’s face it, as fantastic as the holidays can be, there’s a lot of stress that comes along with it as well. There’s tons we all feel we need to accomplish like buying and wrapping gifts, seeing friends and family, writing cards, and decorating the home. This can all be pretty overwhelming with the biggest stress of all being the lack of time to get it all done!

There’s simply never enough time during the holidays, turning what should be the most exciting time of year into the most frantic. Don’t get me wrong, I absolutely love entertaining, especially during the holidays when everything is given a festive twist, but preparing a spread that I can be proud to serve my guests in a reasonable amount of time isn’t always a reality. Thankfully with my new collection of food hacks in my back pocket, I’ve got all the tricks I need to cut down on time allowing me to spend more quality time with my friends and family this holiday season.

One of my favourite time-saving dishes that’s big on flavour and comfort, but low on time and effort is my Time-Saver Muffin Tin Scalloped Potatoes. The first time-saver in this dish is thanks to the help of Philadelphia Dips, which allows you to skip the step of making a béchamel sauce or flavoured cream to layer in between your potatoes. The second time-saver is a good ol’ muffin tin, allowing you to create individual, mini scalloped potatoes within each muffin cup, which will cut down on cooking time. By simply layering your ingredients in the muffin tin, and slipping it into the oven for thirty minutes you’ll be left with a great party-friendly addition to your holiday spread, not to mention an extra half hour to spend with your guests!

 

Get These

  • Unsalted butter, to grease muffin tin
  • 3 large Yukon Gold potatoes, peeled and very thinly sliced
  • 1 container Philadelphia Dips Onion
  • 1 cup Kraft 4 Cheese Italiano Light Shredded Cheese
  • 2 tbsp light cream
  • Pepper to taste

Do This

  1. Preheat oven to 375º F.
  2. Grease a standard 12-cup muffin tin with butter.
  3. Layer one or two potato slices on the bottom of each cup. Top with about ¼ tsp Onion Dip, 1 tsp Shredded Cheese, and 1/8 tsp pepper.
  4. Continue layering potatoes with the dip, cheese, and pepper until the potatoes reach the top of the cup, finishing with a bit of cheese.
  5. Add a ½ tsp of cream to each cup and bake for 30-minutes, or until tender when inserted into the centre with a knife. Serve immediately.
