Eggs-In-A-Ham Basket

Breakfast, the most important meal of the day, but often the most disregarded. Being someone who predicts the quality of my day based on the quality of my breakfast, it absolutely baffles my mind that so many Canadians skip this incredibly important meal! I’m the type of person that turns into one very grumpy zombie should I miss out on the first meal of the day. I even find myself grumpy if my breakfast doesn’t contain at least one egg, meaning that surely the rest of my day will be just as lackluster.

I understand that not everyone has the time to make a special breakfast during the busy workweek (but that doesn’t mean I’ll ever understand you breakfast skippers!), but come the weekend I think it’s nice to take the extra couple minutes to make something special for yourself and your loved ones. It’s easy for people to carry their mid-week routine into the weekend, getting through the morning with just a simple piece of toast or bowl of cereal, but I promise you that preparing something delicious and a little extra special will ultimately set your whole weekend on the right course!

Taking an extra couple minutes on your weekend morning to prepare breakfast doesn’t have to be a chore, well, that is if you have a handy food hack up your sleeve! Introducing my Eggs-In-A-Ham Basket, the answer to your weekend morning hunger woes! With as little as five-minutes of prep time and 20-minutes of baking in the oven, you can deliver a delicious dish that will make your belly happy and put your mind at ease! By simply fitting slices of ham into greased ramekins, cracking an egg inside, and topping with cheese and barbecue sauce, you have done all the work required for the ultimate quickie morning bite. It’s just that easy, and all the more appetizing than a bowl of cereal!

Get These

  • 8 slices ham, thinly sliced
  • ¼ cup Kraft Double Cheddar Shredded Cheese
  • 4 eggs
  • 1 Tbsp Bull’s-Eye Old West Hickory Barbecue Sauce
  • pepper to season
  • 1 Tbsp chives, finely chopped

Do This

  1. Preheat oven to 350ºF. Spray four ramekins with cooking spray.
  2. Fit two slices of ham into each ramekin to form ham cups. Divide half of the cheese evenly between the four cups.
  3. Crack an egg into each cup and top evenly with remaining cheese. Divide the BBQ sauce between the four ramekins. Season with pepper and bake for 20-25 minutes, or until the egg whites are set. Carefully pop out each cup, garnish with chives, and serve immediately with toast.

Done!
