Valentine’s Day Cake

The holiday of love is upon us, and with it comes an abundance of Valentine’s Day clichés! I have to ask myself each February, does buying someone a box of heart-shaped chocolates or overpriced long-stemmed roses really express one’s admiration for a loved one? I don’t know about you, but for me I would much rather take the time to make something special for my someone special, to show them just how much I value them in my life.

Sure, buying chocolates and flowers is quick and easy, but getting clever with creating something memorable can also be incredibly simple, and will mean so much more to the lucky one on the receiving end. With good food being the ultimate token of love, in my mind at least (move over diamonds!), and with so many wonderfully creative Valentine’s Day-themed recipe ideas and food hacks on the Internet, it’s never been easier to express your love with something tasty!

With food hacks on the brain this year, not to mention a busy schedule and a limited budget, I turned to my collection of hacking tips and tricks to come up with something interesting and striking for my loved one. Ever since I was first appointed the title of being KRAFT’s ‘Ultimate Food Hacker,’ I have been dying to try a hack for making a heart-shaped cake, using only one square and one circle baking pans. The hack looked so incredibly simple to execute, and the results were gorgeous! Sure enough, my heart-shaped cake turned out beautiful! It was absolutely delicious, and featured some of my boyfriend’s favourite flavours, pistachio and orange! I promise, this is one hack you are going to LOVE!

Get These

  • 1 pkg. (2 layer size) French Vanilla cake mix
  • 1 pkg. (4-serving size) JELL-O Pistachio Instant Pudding
  • 1 cup water
  • ½ cup vegetable oil
  • 4 eggs
  • 1 tsp orange zest
  • 1 ½ cups cranberries
  • 1 tub (450 g) ready-to-spread vanilla frosting
  • ¾ cup pistachios, shelled and chopped

Do This

  1. Preheat oven to 350ºF (preheat to 325ºF for dark, nonstick pans). Grease a 9” square baking pan and a 9” round baking pan.
  2. In the bowl of an electric mixer, add in the cake mix, instant pudding, water, vegetable oil, eggs, and orange zest. Blend on low for 30-seconds. Increase speed to medium and mix for two-minutes. Stir in the cranberries and divide batter evenly between the two prepared baking pans. Bake for 23-28 minutes, or until a toothpick inserted into the centre of the cake comes out clean. Let cool.
  3. Using a serrated knife, cut the round cake down the centre. See above image for assembly instructions. Ice the cake with the ready-to-spread vanilla frosting and sprinkle the chopped pistachios around the border of the cake. Serve to your Valentine with a side of love!
