Cauliflower is so on trend right now! It seems wherever you look the crunchy vegetable is popping up in new and innovative forms. There’s no doubt about it, the humble white vegetable is having a moment. Long gone are the days of plain cauliflower, to be replaced with new and exciting ways of preparing the healthy veg. Particularly helpful for health-conscious individuals, the versatile properties of cauliflower allow it to be transformed in ways never seen before, including cauliflower pizza crust (perfect for those with a gluten intolerance), cauliflower tots (a take on tater tots), cauliflower breadsticks, and so much more!

Though there are so many fantastic new ways of preparing cauliflower that have caught my attention lately, there is one cauliflower dish that has me the most inspired. Thanks to its insanely simple preparation and absolutely delicious results, I can’t stop obsessing over cauliflower “rice”! Cauliflower rice is just as it sounds –simply cauliflower made to look, feel, and taste like rice. All it takes to achieve this wonderful rice-like texture is a quick pulse of chopped cauliflower pieces in a food processor.  Cook in a skillet with a little butter until tender-crisp. That’s it! Can you believe it’s just that easy to hack cauliflower into a low-carb, high-fiber comfort food favourite?

To enhance the flavours of the “rice,” I decided to approach the dish with a Mexican theme! Speckled with black beans and cilantro, and kicked up with Kraft Roasted Red Pepper with Parmesan Dressing and lime juice, it’s easy to get everyone in the family excited about eating their vegetables!

Get These

  • 1 head cauliflower, chopped into medium-size pieces
  • 1 Tbsp butter
  • ¼ cup Kraft Roasted Red Pepper with Parmesan Dressing
  • ½ cup canned black beans, drained and rinsed
  • 2 Tbsp fresh cilantro, finely chopped
  • 1 Tbsp lime juice

Do This

  1. Add cauliflower pieces to the bowl of a food processor. Pulse until cauliflower is broken down into very small pieces resembling couscous.
  2. Heat a large non-stick skillet to medium heat. Melt butter and add the cauliflower “rice.” Cook for 3-5 minutes, or until tender. Do not allow the cauliflower to overcook and get mushy. Let cool.
  3. In a large bowl combine the cooked cauliflower “rice” with the dressing, black beans, cilantro, and lime juice. Fluff with a fork and serve.
