Instant Ramen Stir-Fry

The mid-week dash; we’ve all been there. You know what I’m talking about. It’s that one night of the week that always feels like you’re running a marathon just trying to get the basics of your evening together. Growing up, my family always called it “order-in night,” and it was always on evenings when both my sister and I were rushing to get to dance class.

With a demanding job and a whole lot of familial responsibilities, my mother had accepted that the only way to get food in our bellies before rushing off to dance was to order in takeout. I’ll be honest, although my mom was an amazing cook, both my sister and I loved order-in night, seeing it as a fantastic opportunity to enjoy some of our favourite foods. Each week would bring new delights from around the world to our eager mouths; pizza, fried chicken, burgers, Asian noodles, the list goes on!

Despite our joy at getting to spoil ourselves with restaurant food, those heavy takeout dishes weren’t exactly the most practical option before running around a dance studio. So how can you get a satisfying and tasty pre-dance class snack on the table in no time at all?

With that mid-week dash still present in my life thanks to social and work-related commitments, I still find myself looking for tricks (or should I say hacks!) to keep myself from getting hunger pangs when that mid-week rush hits. One of my favourite hacks for a quick and tasty snack in a hurry is to make Instant Ramen Stir-Fry. Instant ramen noodles are a wonderful option because they’re inexpensive, take two minutes to soften, are satisfying, and lastly, allow you to make a single snack portion without waste. If only we had known about this hack all those years ago, we could have had the best of both worlds during the mid-week rush, a quick snack with tasty takeout-tasting flavours.

Get These

  • 1 pkg. instant ramen noodles (flavour packet discarded)
  • 2 Tbsp. Kraft Asian Sesame Dressing
  • ½ cup frozen Asian mixed vegetables
  • 1 tsp. grated ginger
  • 2 Tbsp. reduced sodium soy sauce
  • 1 green onion, sliced

Do This

  1. Place ramen noodles in a soup bowl. Add 1 cup boiling water. Let stand covered until softened. Drain.
  2. Heat dressing in a medium skillet set to medium-high heat. Add frozen vegetables and ginger. Cook until heated.
  3. Add noodles and soy sauce and toss to combine. Serve garnished with green onions.
