  • Heat oven to 375°F.
  • Prick potatoes; place on baking sheet sprayed with cooking spray. Bake 45 to 55 min. or until tender. Cool slightly.
  • Heat broiler. Cut potatoes lengthwise in half. Scoop out centres into medium bowl, leaving 1/4-inch-thick shells. Add broccoli, dressing and half the cheese to potato flesh; mix lightly.
  • Place potato shells on prepared baking sheet; fill with broccoli mixture. Top with remaining cheese.
  • Broil, 4 inches from heat, 2 to 3 min. or until cheese is melted and filling is heated through.

Substitute drained thawed frozen chopped broccoli for the blanched fresh broccoli florets.

Use Your Microwave

Prick potatoes. Microwave on HIGH 9 to 10 min. or until tender, turning over and rearranging every 3 min. Cool slightly. Make potato shells and stuff as directed. Place on microwaveable plate. Microwave 2 to 3 min. or until cheese is melted and filling is heated through.

How to Blanch the Broccoli
