  • Remove outer layer of leaves from Brussels sprouts. Trim the stems to a bare minimum (taking care not to slice stem so close that the sprouts fall apart as they cook).
  • Place Brussels sprouts and water in a large microwavable bowl; cover with vented plastic wrap. Microwave on HIGH 7 min. or until sprouts are tender. Plunge sprouts immediately into ice water.
  • Mix tomatoes and onion in a large microwavable bowl. Microwave, uncovered, 6 min. or until onion is tender and tomatoes are heated through.
  • Cut Brussels sprouts in half and add to tomato mixture; stir. Cover with plastic wrap. Microwave 3 min. or until Brussels sprouts are hot. Sprinkle with cheese; cover. Let stand 1-2 min. or until cheese is melted.


Prepare as directed, using your favorite flavour of canned tomatoes.

Plunging Brussel sprouts in cold water stops the cooking process and preserves the fresh green colour.

    I really liked this recipe and i am not even fond of brussel sprouts. I added a bit of italian dressing to the tomatoes and onions before I microwaved them and i found it gave the dish a better taste.

    What a great veggie side dish! I really love that it is a microwave recipe leaving room for your main dish on the stove. I made this to go with mini-meatloaves last night, and my boyfriend (who doesn't like trying new things) really enjoyed them. I used leftover bolognese sauce, and added some broccoli (I think cauliflour or carrots might also work). I will definitely make this again!
