I made this because I needed something fast and easy to make. I will make it again because it was delicious! I used frozen corn and dried cilantro because that was what was on hand, but it was still yummy and every bite was eaten! Lots of enquiries about where to get recipe!


I've made this recipe a dozen times already and only found it a couple weeks ago. It's so fresh and delish! LOVE IT!




When I made this recipe I didn't have fresh tomatoes so I used a 28 oz. can of whole tomatoes and put them in a food processor. Added a touch of sugar ( approx. 1/2 tsp. ) and some salt & pepper. Also used about 1/4-1/2 tsp of dry cilantro leaaves as I had no fresh cilantro. In spite of the changes, it was delicious, everyone loved it and I will definitely keep this on my favorite list.


This recipe is awesome. I've made this on many occasions and is always a huge hit. The only thing is I leave out cilantro. I make this at the cottage and use it to make nachos on the bbq.


I make this at every bbq, and event that I have. It is always a big hit, and have had to give this recipe to people everytime. It is now known as one of my specialties.


this is very delicious. i would just eat it as a side salad with dinner, or even as a meal for lunch.
